Shhhhhhhh. A sneaky way to eat kale! Kale isn’t for everyone, so a great way to get all the leaf’s nutrients is to hide it in a velvety smoothie that tastes decadent and hides the bitter flavor. Banana, coconut milk, cinnamon, and vanilla are a great combination that your kids or stubborn significant other will enjoy without even noticing the taste of the underlying vegetable. Serve the smoothie for breakfast topped with a few tablespoons of granola, try it for a pick-me-up afternoon snack, or, dare I suggest, dessert!
COCONUT KALE SUPER SMOOTHIE
- 1 large frozen banana
- 1 big handful of kale-chopped
- 1 cup unsweetened enriched coconut milk
- 6 cubes of ice
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1-2 dates
- Toppings-hemp seeds, chia seeds, or/and flaxseeds
- Blend all ingredients until smooth. Serve with desired toppings.
